MAPPING THE SHIFT

Bringing the Feel to Non-Alcoholic
and Functional Beverages

Applied Food Sciences (AFS) is introducing a new way to think about functional beverage innovation: Start with the feeling.

For years, functional beverage innovation has often followed a familiar model: list the trending ingredients, tick the necessary benefit boxes, and hope consumers buy in. But today’s beverage consumers are not just asking, “What is in this drink?” They are asking, “How will this make me feel?”

Immediately, the mind begins to move across a series of intuitive planes. Do I want more energy or more calm? Do I need sharper focus or a chance to unwind? Is this a personal moment or something I want to share with others? This is where product development can win. With this guide, we want to move away from starting with an ingredient and begin by charting the desired physical, mental, and emotional outcome. The shift in state of being.

Physical State
Am I looking to ramp up, switch on, and power through the day, or am I trying to settle down, release tension, and ease into relaxation?

Mental State
Do I want to activate my mind and sharpen my attention, or do I want to quiet the noise, alleviate the stress, and let my mind wander?

The Occasion
Am I looking for a self-care “me moment,” or is this a shared experience, opening up with friends to be socially engaged?

That mental map becomes a powerful product development tool.

Without even realizing it, consumers are plotting a multi-dimensional path in their minds. At this stage, they aren’t pursuing specific ingredients such as caffeine or adaptogens. Instead, they’re looking for a catalyst to help their mood, energy, and social connection move toward that desired destination.

Each destination creates a different product brief.

Functional mapping allows anyone from flavor scientists to brand marketers to intuitively understand the consumer’s journey. Below are some examples in which the right coordinates will evoke a true product vision that can craft the repeatable experience consumers will crave.

As we move across each plane, we paint an entirely new picture of what functional beverages can become. The opportunity is no longer just to add function. It is to design a beverage experience.

Mapping the Shift

This framework opens up new conversations about what functional beverages can become. A framework designed around a clear, repeatable feeling that consumers can recognize, enjoy, and come back to.

For product developers, the opportunity is to move beyond “What function can we claim?” and ask a more human question: “What do we want people to feel?”

That question can reshape everything that follows, from ingredient selection and flavor architecture to packaging, positioning, format, and occasion strategy. Because when function is built around feeling, the beverage becomes more than a list of benefits. It becomes an experience that consumers will seek again and again

That is how we bring the feel to functional beverages.
